
Prepare and enjoy three traditional soups: "acqua cotta" (Tuscan style vegetarian soup made with porcini mushrooms in a tomato based broth), "zuppa verde" (spinach and swiss chard soup, cooked in a chicken based broth with sauteed leeks), "zuppa di lenticchie" (lentil soup made with bits of Italian sausage in a tomato based broth with fresh herbs). All the soups will be served with homemade crostini and a seasonal salad or vegetable. This class is held in the Cooking and Lifestyles Classroom at Whole Foods Market, 3135 Washtenaw Ave., in Ann Arbor. Students may register on-line through www.wccnet.edu
