28-Day Engine 2 Challenge Introduction

The 28-Day Engine 2 Challenge is a plant-strong way of eating based on the best-selling book, The Engine 2 Diet. The main idea is to incorporate more whole plant foods into your diet to support your heart, your mind, your body and your taste buds! This life-changing program was developed by professional triathlete and firefighter Rip Esselstyn. Esselstyn brought a plant-based diet into his Texas firehouse to save the life of a fellow firefighter whose cholesterol level had hit a dangerous high of 344. In the process, the young man nearly cut his cholesterol in half and the entire engine company lost weight and improved its health in a matter of just 28 days.  In this intro class you’ll learn the approach those firemen took and how you can take the challenge yourself with the support of The Engine 2 Diet book, Healthy Eating Specialist Camille, and other health-minded members of the community!

28-Day Engine 2 Challenge, Week 1 – The Dairy Dilemma

Wednesday, September 18: 7 pm in our Lifestyle Center – FREE

Start your engines! This class marks the true start of the Challenge. Whether you’re going full throttle with the program (the “Firefighter” way) or easing into the change (the “Cadet” program), you’ll be experiencing your first week of “plant-strength” with increasing amounts of whole plant foods. The aim this week is to ditch dairy products and processed and refined foods, including white rice, white pasta, white bread, and processed cakes, sodas, etc. Camille will support you with healthy information about why these changes are beneficial to your health, and will demonstrate and sample healthy and delicious plant-strong recipes that make easy and satisfying stand-ins for your old dairy dishes!

28-Day Engine 2 Challenge, Week 2 – My Beef with Meat

Wednesday, September 25: 7 pm in our Lifestyle Center – FREE

This week we’ll continue our plant-strong journey by saying sayonara to meat, chicken, eggs, and fish, while continuing our boycott of dairy and refined foods. Once again, class will focus on the healthy reasoning behind these changes, and Camille will show and sample easy and tasty Engine 2 recipes that will make you forget why you ever ate meat in the first place.

28-Day Engine 2 Challenge, Week 3 – Put the Lid on Oil

Wednesday, October 2: 7 pm in our Lifestyle Center – FREE

In week three, Engine 2 “Cadets” will start choosing foods that contain healthy whole foods fats (avocado, nuts, seeds) in place of those that contain added oils. Eating the whole food (the olive, the almond, or the seed, for example) gives your body the phytonutrients, fiber, vitamins, minerals, and water that calorie-dense, nutrient-poor, processed oils lack. This week’s challenge is to read labels and leave on the shelf any foods that contain extracted and processed fats like olive oil, canola oil, coconut oil, vegetable oil, or any other oil at all. We’ll also learn new, and not too drastically different, ways of cooking without processed oil, and try some delicious dishes!

28-Day Engine 2 Challenge, Week 4 – All-Gone Plant-Strong!

Wednesday, October 9: 7 pm in our Lifestyle Center – FREE

By this week’s class, all participants will have gone 100% whole-foods plant-strong for at least a full 7 days, and they’ll continue for another 7 days of the challenge as the pounds come off and their bodies continue to benefit from their new nutrient-rich way of eating. We’ll celebrate successes (and discuss challenges) while whipping up and tasting some Engine 2 delicacies.

28-Day Engine 2 Challenge, Week 5 – Plant-Strong Party Time!

Wednesday, October 16: 7 pm in our Lifestyle Center – FREE

For all participants who completed the challenge, we’ll have a celebration to share plant-strong recipes, stories, weight loss and health successes, all while chowing down on some delicious and healthful Engine 2 dishes. Challenge participants will receive certificates of completion and we’ll hold a raffle for some of your favorite Engine 2 products and ingredients!
