You love a good savory popcorn-and-almond snack mix. You also love on-the-go snack bars. Did you know you can use some of the same ingredients to make... both? Basically, it’s all the snacks. Well, technically it’s two snacks, but it’s still a pretty great (and delicious) hack. Because two snacks are better than one — make our Smoky Savory Snack Mix recipe below, enjoy it, then make it again in snack bar form. They're both perfect for fueling up on-the-go or tucking into your lunch box.
Smoky Savory Snack Mix
Makes 8 cups
You’ll need:
½ teaspoon smoked paprika
1 teaspoon chile flakes
1 teaspoon chives
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
6 cups popped popcorn
2 cups by Whole Foods Market Roasted & Unsalted Almonds
Combine paprika, chile flakes, chives, salt and pepper in a small bowl. Combine popcorn and nuts in a large serving bowl. Sprinkle popcorn and nuts with seasoning mix and toss to combine. Enjoy!
Smoky Sweet Snack Squares
Makes 16 (2-inch) squares
You’ll need:
½ cup rolled oats
¾ cup 365 Everyday Value Roasted & Unsalted Almonds
3 cups popped popcorn
¼ cup 365 Everyday Value Shelled Pumpkin Seeds
¼ cup 365 Everyday Value Pecan Halves & Pieces
½ cup 365 Everyday Value Organic Maple Syrup
⅔ cup sunflower seed butter
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
½ teaspoon smoked paprika
¼ teaspoon ground coriander
½ teaspoon sea salt
Grease an 8x8-inch baking pan. In a dry skillet over medium heat, toast oats until lightly browned and fragrant. Remove from heat and let cool. Roughly chop ½ cup of the almonds, leaving the remaining ¼ cup whole. In a large mixing bowl, place oats, popcorn, chopped and whole almonds, pumpkin seeds and pecans. Toss to combine. In a saucepan over medium heat, combine maple syrup, sunflower seed butter, vanilla, cinnamon, smoked paprika, coriander and salt. Mix thoroughly until sunflower seed butter is melted. Remove from heat.
Pour maple syrup mixture over popcorn mixture and stir until popcorn mixture is evenly coated. Press popcorn mixture firmly into prepared baking pan. (To ensure that bars hold their shape, grease the palms of your hands and push down strongly on mixture until it is compact.) Refrigerate until firm, then cut into 16 squares. Store in the refrigerator until ready to eat!
