Calling All Corn Connoisseurs

Mexican-Style CornCorn is a summer staple in my house. I can think of three favorite recipes right off the bat:

  • In my hands, hot, buttered, right off the cob!
  • Summer Corn Chowder made with tomatoes, bacon, onion and poblano peppers.
  • Summer Corn Salad with avocado, blue cheese and pine nuts.

Most people think of corn as a vegetable, but it’s really a grain. In fact, it’s a whole gain dating back to prehistoric times in Central America. The large leafy stalk produces “ears” of corn and the kernels are actually the seeds that are attached to the cob.

There are numerous varieties of corn. The field varieties are mainly used as feed for animals and humans eat the sweet varieties. Corn is popular all over the world; some popular international corn recipes include:

With corn, the possibilities are endless. Remember, leftovers can be used in appetizers, baked goods, salads and main dishes. Here are more ideas:

You are making me hungry! I live in Italy and have two questions. 1. Do you plan to open future European locations? Hint Hint :) 2. In Italy, fresh corn on the cob is literally non existent and for this Nebraskan, that is a travesty. I wondered if you thought frozen or canned was a better alternative when fresh is not available. Thanks! Love shopping your Omaha locations when I am at home! I miss being close to your stores!

@CAROLINE - We've missed you too! Currently we have stores open in the UK area (http://www.wholefoodsmarket.com/stores/list/uk) but I have not heard any other plans slated for Europe. I personally prefer to use frozen corn but really either is fine and it would boil down to the recipe you are using. A lot of our recipes online will mention "frozen" if a specific type is recommended.

Can you tell us if the sweet corn sold at Whole Foods is non-GMO? I've been hesitant to buy any sweet corn, now that the GMO varieties are being planted and sold and it makes me sad because I LOVE it.

@JANIE - Corn is definitely a high-risk GMO crop. Unless something with sweet corn in the ingredient list, or fresh corn in produce, is listed as organic or non-GMO verified there is really no way of knowing if it contains GMOs. Since there is not mandatory GMO labeling in the US, it's best to look for products that have gone through testing. We did announce GMO labeling for our stores so soon you will be able to know for every product.
