Vegan Caramel Sauce

Makes about 2 cups

Make this easy vegan caramel to satisfy your craving for a sweet treat. Use as a dip for apple slices, combine with cashew cream for a frosting or spread the sauce on warm pancakes for a delicious breakfast treat.

  • 2 cups pitted dates
  • 2 tablespoons chia seeds
  • 1 teaspoon pure vanilla extract

Combine dates and 1 1/2 cups hot or boiling water in a medium bowl and let soak overnight. Combine all ingredients (including soaking water for dates) in a blender or food processor, and process about 2 minutes or until smooth. Add more warm water as needed to achieve the desire consistency. Store in the refrigerator up to 5 days.
