The domaine ascribes to the philosophy of lutte raisonnée, employing rational use of pesticides, ploughing round the young vines, and mowing between some rows while ploughing under them elsewhere. The work is done depending on the weather, not systematically. Harvesting is by hand and machine, so that the fruit can be picked quickly and at the best time. The harvest is pressed pneumatically and vinified at low temperatures in stainless steel tanks and oak casks (new wood is never used). The wines are filtered with a tangential filter and bottled on their own filling line. The bottling equipment is sterlized with steam at 212°F, and no chemicals are used
The Pichot family is one of the oldest in Vouvray with origins as viticulturists dating back to 1739. The family cellars are located in caverns hewn from the rolling hills, once quarried to provide stone to construct the grand châteaux of the Loire.
Shows nice richness, offering creamy red pear, 89 yellow apple and fig flavors, with vibrant acidity and a juicy, lively finish.
A light and delicious wine that compliments perfectly Beurre Blanc Sauce, Sweetbreads in Cream, Chicken Tarragon, and Pork Tenderloin with Cream amongst many other dishes.
