Description
CERES Certfied Organic grapes, cold soaked, pressed under inert gas, preserving the grapes’ aromas. Fermented in stainless steel and aged on lees 4 months. 30% fermented in concrete eggs and neutral oak to enhance mineral notes, texture and mouthfeel.
Matetic Vineyards established by Jorge Matetic in 1999 in the Rosario Valley (Casablanc & San Antonio DO). Matetic has 470 acres farmed organically (certification by CERES),under biodynamic principles (Demeter cert) to achieve 100% natural grapes
A complex mix of aromas including citrus notes, ripe white fruit, fig leaf, refreshing salinity, and a hint of spice typical to this varietal in coastal climates. On the palate, the wine is fresh and nervy with good volume, fruit concentration.
Serve at 50-54° F. This Sauvignon Blanc is ideally served with fish, especially raw fish dishes like ceviche, tuna carpaccio, sushi, oysters, scallops, salads, and goat or blue cheeses.
