Asian Chicken Salad

This Asian-inspired salad is easy and full of flavor, combining crunchy cashews with sweet oranges and baby corn. It's perfect for potlucks or summer dinners. For even faster prep, use a cooked rotisserie chicken.
Ingredients: 
  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon canola oil
  • 1/4 teaspoon fine sea salt
  • 1/4 cup lemon tahini dressing
  • 1 tablespoon toasted sesame oil
  • 3 tablespoons rice vinegar
  • 1 (11-ounce) can mandarin oranges, drained
  • 6 pieces baby corn, quartered
  • 3 green onions, chopped
  • 2 cups finely sliced Chinese Napa cabbage
  • 2/3 cup roasted and salted cashews
  • 1/8 teaspoon ground black pepper
Method: 
Preheat the oven to 400°F. Brush chicken breasts with oil and season with salt and pepper. Bake 20-25 minutes. Let cool and cut into 1/2-inch pieces. 

In a medium bowl, whisk together salad dressing, sesame oil and vinegar. Add chicken to bowl, stir to coat and then gently toss together with oranges, corn and scallions. Place cabbage on a large platter and top with chicken mixture and roasted cashews.
