- 12 slices bacon, partially cooked
- 12 large sea scallops (about 1 pound)
- 3 ounces firm blue cheese
- 1/4 cup fig spread
- 1/4 teaspoon ground black pepper
- Canola spray oil
Preheat the broiler. Broil scallops for 4 to 5 minutes per side, turning carefully, until bacon is browned and scallops are cooked through. Remove toothpicks and serve with additional fig spread if desired.
