Baked Orange Chicken

Serves 8

Serve this chicken and its flavorful juices over buttered rice or pasta.

  • 1 onion, sliced
  • 1 red pepper, cut into 1/4-inch-wide strips
  • 1 whole chicken (about 3 1/2 pounds), cut into 8 pieces
  • 2 oranges, Juice of
  • 1 orange, Rind of
  • 1 tablespoon tamari
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon maple syrup

Preheat oven to 400°F. Place onion and red pepper in the bottom of a large baking dish. Arrange chicken pieces on top. Combine orange juice and rind, tamari, toasted sesame oil and maple syrup in a medium bowl. Pour over chicken pieces. Place in preheated oven and immediately reduce heat to 350°F. Bake for 25 to 30 minutes, basting occasionally. Increase heat to 400°F for the last 10 minutes of cooking to brown chicken.
