1/2 cup finely chopped pitted fresh cherries (about 8)
6 tablespoons whole grain or Dijon mustard
2 teaspoons canola oil
1 red onion, thickly sliced, rounds intact
4 (4-ounce) premade beef burger patties
1/2 teaspoon fine sea salt
1/2 teaspoon ground black pepper
4 whole wheat hamburger buns, toasted on grill
4 leaves Bibb or romaine lettuce
1/2 cup blue cheese crumbles
Prepare a grill for medium-high heat cooking. Combine cherries and mustard in a bowl; set aside. Brush oil on onion slices and then season burgers and onions with salt and pepper. Grill all, flipping once, until onions are tender and burgers are cooked to your liking, about 10 minutes. Spread mustard on bottom buns; top with lettuce, onions, burgers and blue cheese. Top with buns and serve.
