Braised Pineapple with Star Anise and Ginger

Serves 6 to 8

Pineapple braised in its own juice creates a memorable (and super simple) dessert. Star anise and ginger infuse the braising liquid, which reduces to a thick syrup.

  • 1 1/2 cups pineapple juice
  • 4 whole star anise
  • 2-inch piece peeled fresh ginger, cut into thin slices
  • 1 large pineapple, quartered lengthwise, core removed, cut into 1/2-inch thick slices

In a large high-sided skillet, combine pineapple juice, star anise and ginger; bring to a boil over medium-high heat. Add pineapple slices, reduce heat to medium-low, cover and cook, stirring several times, for 30 minutes or until pineapple is very tender. Uncover and transfer pineapple slices to a serving platter. 

Increase heat to medium-high and bring braising liquid to a boil. Cook, stirring frequently, until reduced to a syrup, about 3 minutes. Pour over pineapple to serve immediately or chill until ready to serve and enjoy cold.
