Cannellini Bean Spread

Serves 4

Serve this lemony, garlicky bean spread with pita chips or toasted baguette slices.

  • 1/4 cup extra virgin olive oil, more for drizzling
  • 3 cloves garlic, crushed
  • 1/2 teaspoon crushed red pepper
  • 2 cups cooked cannellini beans
  • Juice of 1 lemon, or more to taste
  • 1/8 teaspoon cayenne
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon ground pepper

Heat olive oil in a small saucepan. Add crushed garlic and cook over low heat for 2 minutes. Remove from heat, add red pepper and let flavors meld for at least 30 minutes. Remove garlic from oil and pile both garlic and white beans into food processor. Process until smooth. With the motor running, add olive oil with crushed red pepper, lemon juice and cayenne. Add salt and pepper and pulse to combine. Pack into a bowl and allow to sit at room temperature so that flavors intensify. Drizzle with a little olive oil before serving.
