Chilled Mango-Cherry Soup with Kiwi

Chilled Mango-Cherry Soup with Kiwi

Serves 4
Pleasantly sweet, slightly tart and a little spicy, this soup is an antioxidant powerhouse, especially if you thin it a bit with pomegranate juice — a tart and wonderfully refreshing addition. It's the perfect starter for a summer meal, or a savory, healthy snack.
Ingredients:
  • 3 ripe mangoes, peeled and sliced
  • 2 cups frozen pitted cherries, thawed
  • 2 tablespoons lime juice
  • 1/2 cup fresh mint

Method:
Put mango, cherries, lime juice and 1 1/2 cups water into a blender and puree until smooth. Add mint and ginger and continue to puree until smooth. Strain mixture through a sieve into a bowl; discard solids. Leave as is or thin to desired consistency with pomegranate juice. Cover and chill until cold, at least 1 hour.
When ready to serve, transfer to bowls and garnish with kiwi.
