Day-Before Meatloaf

We've got a comfort-food classic you can whip up whenever you can find 10 minutes. It'll keep in the fridge for up to two days, so you can choose when to bake it.
Ingredients
  • 2 pounds ground beef
  • 3 slices smoked bacon, diced
  • 1 cup frozen chopped spinach
  • 3/4 cup dry bread crumbs
  • 3/4 cup low-sodium beef or chicken broth
  • 1/2 onion, chopped
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • 1 1/4 teaspoon fine sea salt
  • 1/2 teaspoon ground black pepper

Method

Combine all ingredients in a large bowl and mix well. 

Line a baking dish with foil. 

Gather the meat mixture into a ball, place it in the baking dish, and form into a smooth, even loaf about 12 inches long. 

Cover and refrigerate until ready to bake.

Preheat the oven to 400°F. 

Uncover meatloaf and bake until browned and cooked through, about 50 minutes. Let rest 10 minutes before serving.
