Family Night Chicken with Winter Squash

With the arrival of autumn, this delicious, yet simple, chicken dish provides an ideal use for one fall favorite — winter squash. The underlying sweetness in butternut squash is enhanced by cooking along with apple juice, slightly tangy paprika and savory roasted garlic. Makes a beautiful presentation when served on a large platter surrounded by brown rice or noodles.
  • Olive oil cooking spray
  • 4 cups peeled, diced butternut squash
  • 1 cup apple juice
  • 1 teaspoon dried thyme, divided
  • 4 cloves garlic, finely chopped
  • Salt and pepper, to taste
  • 1/4 cup tomato paste
  • 2 teaspoons paprika
  • 1 pound skinless chicken drumsticks
  • 1 pound skinless chicken thighs

Preheat oven to 400°F.

Spray a 9x13-inch baking pan with cooking spray. Add squash, apple juice, 1/2 teaspoon of the thyme, garlic, and salt and pepper to pan and toss gently to combine. Set aside. In a small bowl, stir together tomato paste, paprika, remaining 1/2 teaspoon thyme and salt. Rub chicken drumsticks and thighs all over with tomato paste mixture, then arrange on top of squash in a single layer.

Cover with foil and bake for 30 minutes. Remove foil and continue baking for an additional 20 minutes.

If desired, line a serving platter with noodles or cooked brown rice, then top with squash and arrange chicken pieces on top.
