8 sprigs fresh mint or rosemary, crushed gently to release their oils
Using a small ice cream scoop, divide gelato between 4 tall glasses (1/2 cup in each). Pour over lemon soda and then squeeze a lemon wedge into each, tossing it into the glass when done. Garnish each float with 2 mint sprigs and serve immediately.
