Fresh Cranberry Punch

Fresh Cranberry Punch

Recipe Rating: 3.4005
Serves 8

During the holidays, mixing cocktails to order may not be in the cards. Luckily this sparkling punch brings the party. Besides cranberries, experiment with freezing other edible goodies in the ice ring such as fresh rosemary or orange peel. The punch will sweeten as the ice ring melts.

  • 1 cup fresh or thawed frozen cranberries
  • 2 1/2 cup lemonade
  • 2 cups unsweetened cranberry juice
  • 1 (750-ml) bottle sparkling white wine such as Cava or Don Simon

Place cranberries in a Bundt or tube pan. Add just enough lemonade to cover the cranberries. Freeze until just frozen, about 1 hour. Add remaining lemonade and 1 1/4 cups water to the ring. Freeze until solid, about 6 hours or overnight.

Let ice ring sit at room temperature for 5 minutes. Pour cranberry juice into a large punch bowl, and then unmold and invert ice ring, gently floating it in juice. Pour wine around ice ring, stir gently and serve.
