Frozen Fruit Kabobs

Serves 4

Citrus-honey soaked pineapple cubes, strawberries and bananas covered with shredded coconut, dusted with chocolate and served frozen on a stick. What a spectacular treat on a hot summer evening and proof that some desserts are as tasty as they are good for you.

  • 1/4 cup orange juice
  • 2 tablespoons orange blossom honey
  • 16 medium strawberries
  • 16 chunks pineapple
  • 2 bananas, sliced
  • 4 wooden skewers
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup finely grated or shaved chocolate

Mix orange juice with honey in a large bowl. Add strawberries, pineapple and bananas and toss together to coat. Thread fruit onto skewers in any order that you like, then roll in coconut and chocolate. (You can mix the coconut with the chocolate or keep them separate. You may need to use your fingers to help coat the fruit.) Transfer fruit skewers to a parchment paper-lined baking sheet, cover with plastic wrap and freeze until fruit is completely firm.
