Combine bones, carrot, celery, onion, garlic, bay leaf, peppercorns, parsley and 10 cups water in a large pot and bring to a simmer over medium heat. Reduce heat to medium low and simmer, uncovered, for 1 hour.
Strain and discard solids. Cool and refrigerate for up to 3 days or freeze up to 6 months.
