Grilled Tomato and Tahini Dressing

Makes about 1 1/3 cups, enough for 10 servings
This flavorful combination of sweet-and-smoky grilled tomatoes and nutty tahini makes a terrific dressing for salads, but try it over grilled vegetables or grilled fish or poultry, too. Watch our how-to video.
Ingredients: 
  • 12 cherry tomatoes
  • 1/3 cup tahini
  • 1 1/2 tablespoon white wine vinegar
  • Large pinch cayenne pepper
  • 1/2 teaspoon fine sea salt

Method: 
Prepare a grill for medium-high heat cooking. Thread cherry tomatoes onto 2 metal skewers and grill, turning frequently, until the skins begin to char and tomatoes are tender but not bursting, 4 to 5 minutes. Place in a blender with tahini, vinegar, salt and cayenne, and blend until smooth; add water a tablespoon at a time until dressing is a little thicker than heavy cream.
