Guacamole with Cilantro

Makes about 1 cup
Though toned down for young palates, this guacamole is still fragrant with fresh cilantro and lime juice.
Ingredients: 
  • 1 ripe but firm medium avocado, peeled and pitted
  • 1 tablespoon lime juice
  • 1 teaspoon extra-virgin olive oil
  • 1 teaspoon finely chopped fresh cilantro
  • 1/8 teaspoon ground cumin
Method: 
In a small bowl, mash avocado with a fork until smooth. Stir in lime juice, oil, cilantro and cumin and serve.  

The guacamole will keep refrigerated in an airtight container for up to 3 days.
