Ham Salad with Artichokes

Serves 4
Equally ideal for picnics and lunchboxes, this spoonable sandwich spread is loaded with flavor and texture from ham, artichoke hearts and crunchy celery. For a smoother texture, roughly chop the ingredients and pulse together in the food processor.
Ingredients: 
  • 1/2 pound Applegate Naturals Family Size Black Forest Ham, finely chopped
  • 2/3 cup finely chopped celery
  • 3 tablespoons mayonnaise
  • 8 whole cornichons, finely chopped
  • 4 whole artichoke hearts (packed in water), drained and finely chopped

Method: 
In a medium bowl, stir together all ingredients, and then cover and chill until cold, about 2 hours.
