Herb-Infused Vinegar

Herb-Infused Vinegar

Makes 2 cups

Homemade food gifts are always treasured for their thoughtfulness. We suggest giving this herb-infused vinegar to friends with a list of serving suggestions. Here are a few of our favorites: whisk with olive oil to make a dressing, drizzle on onions that are caramelizing in the pan or toss with sliced cucumbers and red onions for a simple pickle.

  • 2 cups wine, rice, or cider vinegar
  • 5 herb sprigs (such as oregano, rosemary, tarragon, or thyme), lightly crushed
  • 1 small, whole fresh chiles (optional)
  • 1 clove garlic (optional)

Put vinegar and 4 to 5 herb sprigs in a jar, seal with a tight-fitting lid, and set aside to let infuse until flavors blend, 5 to 6 days. Strain vinegar through a fine mesh sieve into a decorative bottle and add the additional herb sprig. Add a couple of chiles or garlic cloves, if you like. Tie on a hand-written card with serving suggestions around the neck of the bottle.
