This melon salad makes a terrific side or starter for a warm-weather meal. Make an even smokier version of this salad by first charring the poblano whole on the grill or over the flame of a gas burner before removing the stem and seeds.

Method
In a large bowl, toss together lime juice and poblano.
Add honeydew, cucumber and mint, and toss again.
Sprinkle with smoked salt and serve.
* If poblano peppers aren't available, substitute a small green bell pepper and a pinch of cayenne pepper.
