Mole Chicken

Mole is a fragrant simmered sauce that uses chocolate for depth of flavor. This quick version makes it easy to have mole any night of the week. Serve it with rice and tortillas, if you like.

Ingredients

    1 tablespoonextra-virgin olive oil
    1 poundboneless, skinless chicken breasts, cut into 4 pieces
    1/2 largeyellow onion, thinly sliced
    4 clovesgarlic, finely chopped
    1 can (14-ounce)crushed tomatoes
    1/2 cuplow-sodium chicken broth
    1 tablespoonunsweetened cocoa powder
    2 teaspoonshoney
    2 teaspoonscider vinegar
    1/2 teaspoonground cinnamon
    1/2 teaspoonchipotle chile powder
    1/2 teaspoonfine sea salt
    1/4 teaspoonground black pepper

Method

In a large skillet, heat oil over medium heat. 


Add chicken and cook 2 minutes per side, until golden brown. 


Remove to a plate. 


Add onions and garlic and cook 3 to 4 minutes, stirring frequently, until onion is tender.


Add tomatoes, chicken broth, cocoa powder, honey, cider vinegar, cinnamon and chile powder. 


Bring to a boil. 


Return chicken to the skillet. 


Season with salt and pepper and reduce heat to a simmer. 


Cover and cook about 15 minutes. 


Uncover and cook 3 to 5 minutes more, stirring occasionally, until chicken is completely cooked through and sauce is lightly thickened. 


Transfer chicken and its sauce to plates and serve.
