Oaxacan-Style Guacamole

This delicious guacamole is creamier and fluffier than most versions, making it a terrific sauce for grilled or roasted salmon, chicken breasts, or cauliflower or tofu steaks. But you can also use it as a dip for veggies or to add an intriguing touch to Mexican favorites.

  • 2 ripe avocados
  • 2/3 cup loosely packed fresh cilantro leaves
  • 2 cloves garlic, chopped
  • 3 green onions, chopped
  • 3 tablespoons lime juice
  • 1 jalapeño pepper, chopped
  • 1/4 teaspoon fine sea salt

Combine avocados, cilantro, lime juice, green onions, garlic, jalapeño and salt in a food processor and process until fairly smooth, scraping down sides of the food processor as needed. With the motor running, pour in 1/2 cup cold water. Guacamole should be fluffy and pourable; add more water 1 tablespoon at a time if needed.
