Orange-Glazed Wild Alaska Salmon with Mango Relish

Serves 4
A bowl of couscous or jasmine rice is a great accompaniment for this dish since it will help to soak up the orange glaze and juices from the mango relish.
  • Mango Relish
  • 2 tablespoons chopped red bell pepper
  • 1 tablespoon chopped red onion
  • 1 tablespoon finely chopped parsley
  • 1/2 tablespoon finely chopped garlic
  • 1 teaspoon lime zest
  • 1 teaspoon lime juice
  • 1 teaspoon canola oil
  • 1/2 small mango, diced
  • Orange-Glazed Salmon
  • 1/2 cup orange juice
  • 2 tablespoons sugar
  • 2 tablespoons chopped mango
  • 2 tablespoons chopped red onion
  • 1 tablespoon chopped red bell pepper
  • 1/2 teaspoon chopped jalapeño pepper
  • 4 (6-ounce) salmon fillets, skin removed

For the mango relish, put bell peppers, onions, parsley, garlic, zest, juice, oil, and mango into a bowl and toss to combine. Cover and refrigerate. For the salmon, preheat oven to 350°F. In a sauce pot, combine orange juice, sugar, mango, onions, bell peppers, and jalapeños and bring to a boil. Reduce heat and simmer for 10 minutes. Strain and discard the solids. Set aside and reserve the glaze.

Arrange fillets on a baking sheet and brush with half of the glaze. Bake salmon for about 15 minutes, or until filets reach desired doneness. Remove salmon from the oven and brush with the remaining glaze.

Top each fillet with mango relish and serve.
