Pineapple Teriyaki Beef

Serves 4 to 6

Look for asian stir-fry vegetables, already cut and ready to go, in the frozen foods section. Paired with juicy steak and teriyaki sauce, this is a quick meal to easily prepare on busy week nights.

  • 1 tablespoon expeller-pressed canola oil
  • 2 cloves garlic, crushed
  • 1 pound boneless chuck steak, cut into 1/8-inch slices
  • 2/3 cup prepared low-sodium teriyaki sauce
  • 1 (20-ounce) can pineapple chunks, with juice
  • 1 1/2 cups frozen asian stir-fry vegetables
  • 1/2 cup chopped green onions
  • 2 cups frozen cooked jasmine or whole grain brown rice, prepared according to package directions

In a large skillet, heat oil over medium high heat; add garlic and sliced steak. Cook until garlic is golden and meat is seared on the outside. Reduce heat to low; add teriyaki sauce, pineapple and 1/4 cup of its juice. Simmer 10 minutes. Add Asian vegetables and green onions. Cook another 5 to 7 minutes. Serve over prepared rice.
