Red Wine Strawberries and Cream

These spiced, red-wine-infused strawberries can be made ahead of time, or served immediately if you prefer your strawberries firmer. Consider serving with elegant ladyfinger cookies or shortbread.

  • 1 1/2 cups dry red wine, such as Tempranillo or Monastrell
  • 3 tablespoons sugar, divided
  • 4 whole star anise
  • 3 wide strips orange peel (removed with a vegetable peeler)
  • 1/2 pound strawberries, hulled and kept whole
  • 1/4 cup Vermont Creamery Fromage Blanc

In a medium pot, bring wine, 2 tablespoons sugar, star anise and orange peel to a boil. Reduce heat to medium-high and boil until well reduced and syrupy, about 15 minutes; discard star anise and orange peel. Transfer hot syrup to a large bowl with strawberries and toss to coat. Serve immediately, or cover and chill for 8 hours or overnight. To serve, stir remaining 1 tablespoon sugar into fromage blanc and spoon over berries.
