Rip's Chocolate Treats

Remember to soak the dates about an hour in advance, and you can have these truffle-like bites mixed and rolled in about 20 minutes.

Ingredients

    2 cupsEngine 2 Plant-Strong™ Rip's Big Bowl cereal
    1/2 cuppitted dates, soaked in hot water to cover for 1 hour
    2 tablespoonsunsweetened almond butter
    1/4 cupalmond meal
    1/4 cupunsweetened cocoa powder
    1/4 teaspoonchipotle powder
    1/4 teaspoonfine sea salt

Method

Place cereal in a food processor and pulse until coarsely ground. 


Transfer to a large bowl. 


Drain dates, discard liquid and place dates in the food processor. 


Pulse until you have a chunky paste, frequently stopping to scrape down the sides of the bowl. 


Scrape dates into the bowl with cereal. 


Add almond butter and almond meal and mix with a spoon or your hands until all ingredients are thoroughly combined.


In a small bowl, whisk together cocoa powder, chipotle powder and salt. 


Roll the cereal mixture with your hands into balls about the size of walnuts. 


Roll the balls in the cocoa mix to coat and place on a plate. 


Cover and chill for at least an hour before serving.
