Simple Tofu Scramble

Serves 4

This simple dish makes for a terrific, nutritious breakfast or light lunch. Serve with whole wheat toast and fresh fruit on the side.

Ingredients: 
  • 1 teaspoon to 2 teaspoons canola oil
  • 1 yellow onion, finely chopped
  • 2 stalks celery, finely chopped
  • Turmeric to taste
  • 1 (16-ounce) package firm or extra-firm tofu
  • Shoyu to taste

Method: 

Heat oil in a large skillet over medium-high heat. Add onions and celery and cook until softened, 4 to 5 minutes. Stir in turmeric, then crumble in tofu. Reduce heat to medium and cook, covered, for about 10 minutes, stirring occasionally. Season with shoyu and serve.
