Spanish Chickpeas and Chorizo

Serves 8

This Spanish-influenced dish is equally good using canned chickpeas or ones you've cooked yourself. Serve as an appetizer with crusty bread slices on the side.

  • 2 tablespoons extra-virgin olive oil
  • 1 small yellow onion, thinly sliced
  • 1/2 pound spicy Spanish chorizo, sliced
  • 1 (15-ounce) can no-salt-added garbanzo beans (also called chickpeas), drained and rinsed
  • 1/2 teaspoon ground black pepper
  • 1/8 teaspoon fine sea salt
  • 2 tablespoons finely chopped fresh flat-leaf parsley

Heat oil in a large skillet. Add onion and cook, stirring frequently, until golden brown, about 5 minutes. Add chorizo and cook briefly, stirring. Add chickpeas, and cook another 5 minutes to heat through. Season with pepper and salt and sprinkle with parsley.
