Tofu Curry Dip with Chives

Makes about 1 cup
Using tofu as a base makes for an excellent dairy-free dip for carrot or celery sticks, or blanched green beans and asparagus. It easily doubles as a creamy salad dressing, too.
Ingredients: 
  • 1/2 pound silken tofu
  • 2 tablespoons lemon juice
  • 1 tablespoon canola oil
  • 2 teaspoons curry powder
  • 1 tablespoon honey
  • 1 1/2 tablespoon low-sodium tamari
  • 2 tablespoons chopped fresh chives

Method: 
Combine tofu, lemon juice, tamari, oil, honey and curry powder in a blender or food processor and blend until completely smooth. Transfer to a serving bowl and stir in chives. Chill until ready to serve.
