Tofu Veggie Skewers with Pineapple Mango Jerk Sauce

Serves 4
Transform mango into a spiced barbeque sauce that's perfect for glazing these colorful skewers.
Ingredients: 
  • 1/2 cup chopped fresh mango
  • 2 green onions , trimmed and roughly chopped
  • 2 tablespoons rice vinegar
  • 4 1/2 teaspoon reduced-sodium tamari
  • 1 teaspoon ground allspice
  • 1/2 small jalapeño , seeded and chopped
  • 1 package extra-firm tofu , patted dry and cut into 1-inch cubes
  • 1 red bell pepper , cut into 1-inch cubes
  • 1 yellow bell pepper , cut into 1-inch cubes
  • 1 1/2 cup (1-inch) pineapple cubes

Method: 
Prepare a grill for medium-high-heat cooking.

In a blender or food processor, blend mango, green onion, vinegar, tamari, allspice and jalapeño until smooth.

Thread tofu, peppers and pineapple onto skewers. Brush with mango sauce and grill about 4 minutes per side or until warmed through and tender. Serve with any remaining sauce.
