Yogurt-Cucumber Dressing

Makes 2 cups

Here's a dressing that's cool and crisp, and especially nice with rosy tomatoes.

  • 1 1/2 cups chopped peeled cucumbers
  • 1 tablespoon dried dill
  • 1/2 teaspoon finely chopped jalapeño pepper
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 1 cup plain yogurt
  • 1 tablespoon extra virgin olive oil

Combine cucumbers, dill, jalapeño and garlic in a blender or food processor; blend until smooth and creamy. Transfer to a bowl, add lemon juice, yogurt and oil and stir well to combine.
