Aged Balsamic Vinaigrette with Dijon

This simple vinaigrette makes a tasty marinade for chicken, pork or vegetables. Be sure to use aged balsamic vinegar for deep, rich flavor.

Ingredients
- 1 teaspoon Dijon mustard
- fine sea salt, pinch of
- 2 tablespoons balsamic vinegar
- 6 tablespoons extra-virgin olive oil
- ground black pepper, pinch of
Method
Put mustard, salt and pepper in a medium bowl.
Whisk in vinegar to combine.
Gradually whisk in olive oil until vinaigrette emulsifies. Taste and adjust seasoning.
