Bacon Wrapped Shrimp with Pineapple and Chipotle BBQ Glaze
America's favorite breakfast meat shows up for dinner wrapped around plump, juicy shrimp grilled with a glaze of Honey Chipotle BBQ sauce. Pick up peeled and cored pineapple in our produce department to help get these skewers on your table in no time.
- 12 large raw shrimp, peeled and deveined with tail on.
- 6 slices Wellshire Farms Dry Rubbed Bacon, cut in half
- 1 small red onion, cut into 1-inch squares
- 1 pineapple, peeled, cored and cut into 1-inch cubes
- 1 tablespoon vegetable oil
- 1 cup 365 Everyday Value® Organic Chipotle Citrus BBQ Sauce
- 1 tablespoon puréed canned chipotle peppers
- 2 tablespoons honey
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Wrap each shrimp in a half piece of bacon.
Thread 3 shrimp each onto 6-inch skewers to form 4 kabobs. Alternately thread red onion and pineapple onto the remaining 4 skewers. (If using wooden skewers, soak in water for 30 minutes before assembling.)
Prepare a grill for medium heat cooking, oiling the grill grates as needed.
Grill shrimp and bacon skewers until bacon is crisp and the shrimp is pink and juicy, 4 to 5 minutes per side.
Grill pineapple and onion skewers until onions are tender and pineapple is browned and caramelized, about 5 minutes per side.
Mix BBQ sauce with chipotle purée and honey.
Brush skewers with sauce on both sides, about a minute or two before they are done, leaving them on just long enough for the sugars to caramelize.
Garnish with cilantro and lime wedges.
