Bacon Wrapped Shrimp with Pineapple and Chipotle BBQ Glaze

Ingredients

    12 largeraw shrimp, peeled and deveined with tail on.
    6 slicesWellshire Farms Dry Rubbed Bacon, cut in half
    1 smallred onion, cut into 1-inch squares
    1pineapple, peeled, cored and cut into 1-inch cubes
    1 tablespoonvegetable oil
    1 cup365 Everyday Value® Organic Chipotle Citrus BBQ Sauce
    1 tablespoonpuréed canned chipotle peppers
    2 tablespoonshoney
    1/4 cupchopped fresh cilantro
    1lime, cut into wedges

Method

Wrap each shrimp in a half piece of bacon. 


Thread 3 shrimp each onto 6-inch skewers to form 4 kabobs. Alternately thread red onion and pineapple onto the remaining 4 skewers. (If using wooden skewers, soak in water for 30 minutes before assembling.)


Prepare a grill for medium heat cooking, oiling the grill grates as needed. 


Grill shrimp and bacon skewers until bacon is crisp and the shrimp is pink and juicy, 4 to 5 minutes per side. 


Grill pineapple and onion skewers until onions are tender and pineapple is browned and caramelized, about 5 minutes per side.


Mix BBQ sauce with chipotle purée and honey. 


Brush skewers with sauce on both sides, about a minute or two before they are done, leaving them on just long enough for the sugars to caramelize. 


Garnish with cilantro and lime wedges.
