Baked Lobster with Cilantro-Orange Vinaigrette

Serve this flavorful and lighter lobster dish with black bean, corn or quinoa salad. It's an easy, yet impressive meal for entertaining or date night in.

- 2 Clearwater whole frozen lobsters, thawed according to package directions
- Vinaigrette
- 1/2 cup extra-virgin olive oil
- 1 large orange, juice and zest of
- 2 tablespoons lemon juice
- 1 tablespoon chopped shallots
- 1/4 cup chopped fresh cilantro
- 1/4 teaspoon fine sea salt
- 1/8 teaspoon ground black pepper
Method
Preheat the oven to 400°F.
Drizzle lobster with half the vinaigrette.
Bake 15 to 20 minutes or just until flesh turns white.
Serve with remaining vinaigrette for drizzling or dipping.
