Baked Orange Chicken

Serve this chicken and its flavorful juices over buttered rice or pasta.

Ingredients
- 1 yellow onion, sliced
- 1 red bell pepper, cut into 1/4-inch-wide strips
- 1 whole chicken (about 3 1/2 pounds), cut into 8 pieces
- Juice of 2 oranges
- Zest of 1 orange
- 1 tablespoon tamari
- 1 tablespoon toasted sesame oil
- 1 tablespoon maple syrup
Method
Preheat the oven to 400°F.
Place onion and red pepper in the bottom of a large baking dish.
Arrange chicken pieces on top.
Combine orange zest and juice, tamari, toasted sesame oil and maple syrup in a medium bowl.
Pour over chicken pieces.
Transfer to the oven and immediately reduce heat to 350°F.
Bake for 25 to 30 minutes, basting occasionally.
Increase heat to 400°F for the last 10 minutes of cooking to brown chicken.
