Broiled Tilapia with Breadcrumbs
Serves 4
Time 15 min
To tell when the crunchy, breadcrumb-topped tilapia fillets are cooked just right, look for their flesh to become opaque and flake easily with a fork.
Ingredients
- 3/4 cup dry bread crumbs
- 3 tablespoons butter
- 1 1/4 pound tilapia fillets
- 3 tablespoons extra-virgin olive oil
- 1/2 teaspoon fine sea salt
- 1/2 lemon, quartered
- 1/4 teaspoon ground black pepper
Method
Preheat broiler.
Sauté breadcrumbs briefly in 3 tablespoons butter over medium-low heat. Set aside.
Brush baking pan with a bit of oil.
Brush rest of oil on fish and sprinkle with salt and pepper.
Place fillets about 4 inches from heat source and cook for about 6 minutes, rotating pan every 2 minutes for evening browning.
Baste fish with drippings from the bottom of the pan and spread on bread crumbs.
Cook an additional 2 minutes, until fish flakes easily and breadcrumbs are browned. Serve with lemon wedges.
