Brown Jasmine Rice Pilaf

Celery and shallots add crunch and delicate flavor to this fragrant pilaf. Perfect with stir fry dishes.

Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 stalk celery, diced
- 1/2 medium shallot, finely chopped
- 1 cup brown jasmine or basmati rice, washed and well-drained
- 2 cups vegetable broth (gluten-free if desired)
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon ground black pepper
Method
Heat olive oil in a large saucepan over medium heat.
Add celery and shallot and cook until beginning to soften, about 2 minutes.
Add rice and cook until fragrant and nutty, about 2 minutes.
Add broth, salt and pepper, and bring to a boil.
Reduce heat to low, cover, and cook until rice is tender and broth is absorbed, 40 to 45 minutes.
