Chai-Poached Dried Fruit

Dried fruits poached in spiced tea result in a lovely dessert, topped with a bit of chocolate and a few nuts. Don't discard the flavorful poaching liquid—strain and then drink it.

Ingredients

    1(1-inch) piece fresh ginger, peeled and sliced
    8whole green cardamom pods
    1cinnamon stick
    1/4 teaspoongrated nutmeg
    1black tea bag
    1/4 cupsugar
    1/2 cupdried prunes
    2 tablespoonsshaved dairy-free dark chocolate
    2 tablespoonsfinely chopped toasted walnuts
    1/2 cupdried apricots
    1/2 cupdried white Turkish figs
    1/2 cupdried dark figs

Method

Place ginger, cardamom, cinnamon and nutmeg in a large saucepan. 


Add 4 cups water and bring to a boil. 


Cover and simmer for 5 minutes. 


Remove cover and add tea bag and sugar. 


Remove from heat. 


Allow the tea to steep for 3 to 4 minutes. 


Remove the tea bag and discard. 


Add dried fruit and bring to a boil. 


Reduce heat to medium-low. 


Cover and simmer until the fruits have plumped up and are tender, about 10 minutes. 


Remove fruit to a serving dish. 


Ladle a bit of chai from the pan over the fruit and garnish with chocolate and walnuts.
