Champagne Peach Dressing

Makes 1 cup
This festive, bright-orange dressing is perfect tossed with light salads. Champagne vinegar and black pepper balance the sweetness of ripe summer peaches.
Ingredients
  • 2 peaches, chopped, or 2 cups chopped frozen peaches, thawed
  • 3 tablespoons champagne vinegar
  • 1/8 teaspoon ground black pepper

Method

Combine peaches, vinegar and pepper in a blender and blend until smooth, scraping down the sides as needed. 

Dressing will keep in an airtight container in the refrigerator for up to 3 days. 

Before serving, give the dressing a good stir.
