A clafoutis tastes like a cross between a pancake and a custard and is easier to make than both. It can be thrown together at the last minute with readily available ingredients. Try with gooseberries, blackberries, sliced peaches, nectarines or apricots when in season.

Method
Preheat the oven to 375°F.
Butter a 9-inch pie plate.
In a medium bowl, whisk together sugar, flour and salt.
Whisk in eggs one at a time, then whisk in milk and vanilla just until incorporated.
Arrange cherries evenly in the bottom of the prepared pie plate pie plate.
Pour batter over cherries and bake until clafoutis is puffed and browned, 45 to 50 minutes.
Sprinkle powdered sugar over the top and cut into 6 wedges.
