Chimichurri Seitan Skewers

A traditional Argentine condiment, chimichurri is a vibrant olive oil-based sauce. Bright green in color, the sauce is most commonly used on meats, though it is also an excellent match for seitan. Serve with grilled vegetables and extra sauce on the side for dipping.

- 1 1/2 cup packed fresh flat-leaf parsley
- 1/4 cup red wine vinegar
- 6 cloves garlic, minced
- 3/4 teaspoon crushed red chile flakes
- 1 tablespoon diced red onion
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon fine salt
- 1/2 cup extra-virgin olive oil
- 2 (8.0-ounce) packages seitan, drained, large pieces torn in half
Method
Place parsley, vinegar, garlic, chile flakes, red onion, lemon juice and salt in a food processor and pulse until thoroughly combined.
With motor running, slowly add oil.
Place seitan in a shallow dish and pour 3/4 cup sauce onto seitan.
Cover and marinate at least 2 hours or overnight in the refrigerator.
Spray olive oil cooking spray or lightly rub olive oil onto grill grate to prevent sticking.
Preheat grill to medium heat.
Skewer seitan pieces on metal or wooden skewers (if using wooden skewers, make sure you soak in water for at least 30 minutes so they don't burn on the grill).
Grill seitan until golden brown, 5 to 7 minutes on each side.
Remove and serve with the remaining sauce for dipping.
