Chocolate Candy Cane Cookie Mix

Makes about 2 1/2 dozen cookies

Peppermint candy and rich chocolate make this easy mix a holiday classic. To crush candy canes, place them in a large zip-close bag and roll over them gently with a rolling pin until the pieces are no larger than peas. It will take about 8 medium (1/2-ounce) candy canes to equal 2/3 cup.

Ingredients

    3/4 teaspoonbaking powder
    1 cupsugar
    <b>To prepare</b>
    2 cupsall-purpose flour
    1/4 teaspoonfine sea salt
    1/3 cupplus 1 tablespoon cocoa powder
    2/3 cupcrushed peppermint candy canes
    1/2 cup(1 stick) plus 1 tablespoon melted unsalted butter (9 tablespoons)
    2 largeeggs
    1/2 teaspoonbaking soda

Method

For the mix:
In a medium bowl, whisk together flour, baking powder, baking soda and salt. 


Spoon mixture into a 1-quart jar. Layer in remaining mix ingredients.

To prepare:
Preheat the oven to 350°F. 


Pour mixture into a medium bowl and stir in eggs and butter. 


Roll the mixture into 1-inch balls and place 2 inches apart on the parchment-paper-lined cookie sheets.


 Bake until slightly puffed and just dried on top, 12 to 14 minutes. 


Cool on the cookie sheets 3 minutes, then transfer to a rack to cool completely.
