Clams in Green Sauce

Substitute mussels for clams, if you like, in this Spanish tapas recipe, also known as almejas en salsa verde. Make sure to discard any clams that remain unopened after cooking.
Ingredients
  • 12 small clams
  • 2 cloves garlic, thinly sliced
  • 1/2 cup dry white wine
  • 1/2 cup chopped fresh flat-leaf parsley
  • Ground black pepper or crushed red chile flakes
  • 1 tablespoon extra-virgin olive oil

Method

Rinse clams well to remove any sand or dirt. 

Heat oil in a medium skillet, and cook garlic until light brown (do not burn). 

Add white wine and clams. 

Cover and simmer until clams open, about 5 minutes. 

Add parsley, stir and season with pepper. Serve immediately.
