Cranberry and Goji Berry Chutney

Ingredients

    1 package (12-ounce)fresh cranberries
    2/3 cupgoji berries
    1/4 cupchopped dried apricots
    1 mediumshallot, chopped
    1 cupapple cider
    2/3 cupsugar or 1 cup brown rice syrup
    2 tablespoonsmaple syrup
    1 1/2 tablespoonsgrated fresh ginger
    1 teaspoonground cinnamon
    cayenne pepper
    allspice
    1/2 teaspoonfine sea salt
    1/3 cupchopped walnuts
    Zest of 1 orange

Method

Combine cranberries, goji berries, apricots and shallots in a saucepan.


Add cider and enough water to cover.


Bring to a boil, then turn down to a simmer.


Cook until the goji berries are soft and plump and the cranberries pop, about 15 minutes.


Stir in sugar, maple syrup, spices and salt.


Cook 5 minutes longer.


Adjust seasonings, remove from heat, and stir in walnuts and orange zest.


Cool to room temperature. Store in a covered container in the refrigerator for up to 2 weeks.
