Cranberry and Maple Baked Apples

These delicious apples fill your kitchen with the smells of autumn. They make a wonderful dessert or brunch treat served alongside fresh yogurt or waffles. Try Gala, Fuji or Granny Smith apples in this recipe.

Ingredients

    8firm, tart apples, peeled and cored halfway from top
    3 cupscranberry juice
    1/2 cupgrade A maple syrup
    1/4 cupfine sugar
    1 tablespoonlemon juice
    1 teaspoonvanilla extract
    1 teaspoonground cinnamon
    2 teaspoonsgrated fresh ginger
    1 teaspooncornstarch
    1/2 cupdried cranberries
    1/2 cupchopped pecans or walnuts

Method

Preheat the oven to 375°F.


Place apples in a 9x13-inch baking dish or attractive casserole dish large enough to hold all apples.


Retain the bottoms of the cored apples; don't core all the way through.


Fill the apple cavities with the cranberries and nuts.


In a medium bowl, mix cranberry juice, maple syrup, sugar, lemon juice, vanilla, cinnamon, ginger and cornstarch. Pour the liquid over the top of the apples.


Cover lightly with foil and bake until apples are tender and the syrup has become syrupy, 50 minutes to 1 hour.
